The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put the listed components into a saucepan, bring to a gentle boil, stirring until the sugar dissolves. Next, take off the heat and let it to cool down entirely. Transfer into an sealable bottle, seal and store chilled, it will last for around four weeks.
For the Premix: Pour the specified spirits and syrup into one large bottle, allow it to infuse for one hour, then strain , ideally through a fine cloth, so it's perfectly clear.
For serving: Pour 85ml from the premix into a cocktail shaker packed with ice, and stir gently for a minute until cold. Strain into an frosted cocktail glass or equivalent, top with a few cranberries and complete it with a brief mist with the mandarin essence over the top.
